Description Jelly Drink is a beverage product in the form of semi-solid made from ripe fruit juice in sugar, this jelly drink is not just an ordinary drink, but this jelly drink is often consumed as a drink to delay hunger. This study aims to determine the effect of adding starfruit and temperature in the manufacture of jelly drinks to the chemical content as well as to the physical and organoleptic properties of jelly drink starfruit. The experimental plan carried out in the manufacture of jelly drink starfruit wuluh is a Randomized Block Design (RAK) which is composed of 2 factorials, the first factor consists of 2 levels, namely the influence of temperature (80°C and 90°C) and the second factor consists of 3 levels of addition of star fruit. wuluh (100g, 200g, 300g), so that 6 treatment combinations were obtained. Chemical and physical data analysis was carried out using Mini Tab to find out the Analysis of Variance and Tukey Method which would provide information about the notation of each treatment, while the organoleptic test used the Friedman test. The best treatment uses the effectiveness index method. The best combination of treatments for star fruit jelly drink on chemical, physical, and organoleptic content was found in the B3S1 treatment combination (starfruit 300g and temperature 80ᴼC) with the results of analysis of vitamin C value 16.82, pH 3.76%, viscosity 38.32 (cP), color with a value of 3.29 (like), aroma 4.21 (like), texture 3.95 (like), taste 3.95 (like).
