Description ABSTRAK Penelitian ini bertujuan untuk mengetahui kualitas kimia, fisik dan sensoris susu yang dipasteurisasi menggunakan dua alat yang berbeda selama penyimpanan pada suhu refrigerator. Sampel susu diambil dari sapi yang diperah pada pagi hari kemudian dipasteurisasi menggunakan dua alat yaitu PADIRA pateurizer dan Safgard Home PasteurizerR. Variabel yang diamati meliputi uji alkohol, berat jenis, kadar lemak, keasaman lemak protein terlarut serja uji sensoris meliputi kemanisan, keasaman dan ketengikan. Data berat jenis, kadar lemak, keasaman lemak dan protein terlarut dianalisis dengan split-plot, data uji alkohol kemanisan  dan keasaman dianalisis dengan analisis deskriptif dan data ketengikan  (0,33% dan 0,86%) dianalisis dengan chi square dengan metode Kruskal-wallis . Hasil penelitian menunjukan pasteurisasi pada PADIRA Pasteurizer lebih baik dibandingkan dengan Safgard Home Pasteurized. Kata kunci:susu pasteurisasi, pasteurisasi, kualits fisik, kuaslitas kimia, kuaslitas sensoris lama penyimpanan ABSTRAK The research was conducted to know the chemical, physical and sensorical Quality of the pasteurized milk using two different tools in the refrigerator storage.The milktakenfrom cows which milched in the morningthenpasteurizedusing twotoolsnamelyPADIRApateurizerandSafgardHomePasteurizer. Variablesobservedincludealcoholtest, density test, lipid content, acid degree value of lipid globular protein content, and sensorical test includen sweetned, acidity and rancidity degree. Density test, lipid content,acid degreevalue of lipid, globular protein congtent were analiyzed with split-splot design, but alcoholtest, sweetnedand aciditywere analyzedwithdescriptiveanalysisand rancidity(0.33% and 0.86%) were analyzedwithchi-square with kruskal-Wallis method.
