ABSTRACTCulinary business growth rapidly making many restaurants a lot appears in a growing city like in Malang. One of the fast-food restaurant the most sought after in the city of malang is fried chicken Nelongso. The purpose of this research is to know the variables influence the perception rates and service quality through customer satisfaction as the intervening variables on consumer Nelongso fried chicken Branch Sigura-gura Malang. The methods used in this research is kuantitaif. Population and sample used in the book is consumer research fried chicken branch Nelongso Sigura-gura Malang. Sampling sampling techniques wearing accidental, while the research methods in the study of the book using path analysis. The results of this study provide evidence that variable pricing and service quality perceptions influence on customer satisfaction and interest buy and pelannggan satisfaction, customer satisfaction variable influence on interest in buying, and variables customer satisfaction could mediate between the variable perceptions of price and quality of service of interest to buy.Keywords: interest in purchasing, customer satisfaction, service quality and interest buy back.
